The first month in our apartment I had burnt or over-cooked EVERYTHING. I couldn’t even bake brownies. As a new wife I was so frustrated. My mother taught me to cook so I knew I was doing everything right but when it was out of sight in the oven something mysterious was happening. Eventually I just constantly checked on the food to keep it from burning.
One day my amazing mother suggested I check the oven temperature. After a good week of ignoring her advice I finally bought a thermometer. What do you know? My oven was 100 degrees hotter than I set it. 100!!!!! No wonder! Do I burn things now? Well, on occasion but now I can’t blame the oven. I’m just glad I found what the problem was before I baked Nathan’s birthday cheesecake. That could have been a disaster.
My “wonderful” compact oven has a few other problems (or at least I view them as such). It has four burners like most, however you can only use two at a time. Okay, I don’t use three or four burners all at once very often but when I have the need I would like to be able to. Because it sits right up against the brick wall, I have no arm space. This would be a perfect time for me to be left handed. The last almost problem is that I can barely fit a 12×17 pan in the oven. I say almost because that is my largest pan and it actually fits.
Now I do have to be thankful for what I do have: something to prepare hot meals with. I may want something else, but I know that I have a compact and I need to accept that for now. Someday I am sure I will look back and laugh at myself for scraping my elbow against the wall every time (even though I know it is there and it isn’t moving!) Oh the joys of apartment living!
