Birthday Cheesecake

At this point in my life I have decided birthdays are just another day. No need for much celebration. However, I’m all for the cake. No need for gifts. Just a special meal or cake is fine by me. Luckily I married someone with similar ideas. Nathan doesn’t need a huge celebration and doesn’t expect much as far as gifts go. Of course, I do think a gift or small celebration is great to thank him for all he does.

DSCN4335Last week if someone would have said, “Isn’t Nathan’s birthday coming up?” I would have had to think what month it is and try to remember when the day was. I completely forgot. Saturday night I realized if I want to present to him a cake… I actually have to make it. I don’t live with my mother anymore. Such a crazy thought. The only book I have with cake recipes is a cheesecake book my mother gave me because it had the last 5 of my birthday cakes in them.( Yes I know there is something called internet that you can find recipes on, but books make me feel like the recipe is safer to try.) Since I was in 5th grade I have always asked for cheesecake. Amazingly, God gave me a husband who loves cheesecake as well. So lucky me, when I asked Nathan what kind of cake he would like… he gave me a few options and cheesecake was one of them.

I surprised my Nathan with:

Mint Chocolate Cheesecake

  • 1 cup chocolate wafer crumbs
  • 3 Tbs margarine, melted

Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake at 350 degrees, 10 minutes.

  • 3 8-oz packages cream cheese, softened
  • 2/3 cup sugar
  • 3 eggs
  • 1 6-oz package semi-sweet chocolate pieces, melted
  • 1/2 cup chopped creme de menthe mint wafers
  • 1/2 sour cream
  • 1 tsp vanilla

Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in chocolate, mint wafers, sour cream and vanilla; pour over cruts. Bake at 350 degrees, 50 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill. Garnish with additional mint wafers, if desired.
